Preparation Fourth week of October. Pre-phylloxera vines over 100 years old. Native strains, not from American rootstocks. Fermentation temperature between 28º C and 30º C. High concentration of polyphenols, reaching 28 color points. Malolactic fermentation carried out in new Allier French oak barrels. Subsequently, it remains in barrels for 10 months with its corresponding racking.
