The grapes are sorted upon arrival at the winery, removing any unsuitable bunches. They are then transferred to the destemmer/crusher, which pumps the paste into stainless steel tanks, where alcoholic fermentation takes place in the presence of air, releasing heat. The temperature is controlled by external cooling with open-circuit water.
Once the initial fermentation has occurred, the wine is racked. The mash is separated and pressed with a manual press. The wine resulting from the press is stored separately.
The wine is then reintroduced into the tanks, where it undergoes malolactic fermentation.
Classic characters associated with antiquity, craftsmanship, and tradition have been used for the winery's logo.
A signature has been used for the wine's name, to convey concepts such as unique, personal, and creative.
The four wine stains make up a poppy, a flower very present in the Ribera del Duero.
